Cloves, or Syzygium aromaticum, are tiny, dried flower buds from evergreen trees. They taste very different, almost like cinnamon with more spiciness. They go well with other herbs like nutmeg and cinnamon and can be purchased whole or ground for use in baking, medicinal use and cooking. They’re more common during the winter months and around Christmas, when they’re utilized in baked ham and mulled wine recipes.

Cloves have anti-inflammatory properties that help reduce inflammation and relieve pain, such as eugenol and flavonoids. Due to its analgesic and anti-inflammatory properties, clove oil is a well-liked home remedy for gum pain and toothaches. Cloves have long been used in food as a flavoring and antimicrobial component.

Compared to synthetic antioxidants, clove is used as a protective antioxidant in baked goods, slows down oxidation, and reduces the formation of oxidation products.

Clove decreases the adverse reactions that result in the loss of flavor, scent, color, and texture in meat products. It has an antibacterial action that lowers the amount of bacteria, the generation of hydroperoxide, and the breakdown capacity of nitrogenous molecules that are not proteins due to its antioxidant qualities.

Meats intended for freezer or refrigerator storage, such as fish fillets, ground beef, white shrimp, salmon burgers, chicken breasts, and chicken patties lasted up to 45 days, when covered with cloves. Clove can stop animal-derived food microbiological growth, water activity, color change, lipid oxidation, and weight loss

Description

The antiviral, antifungal, antidepressant, analgesic, antioxidant, anticancer, antiseptic, antispasmodic, anti-inflammatory, and antibacterial properties of eugenol in cloves against a variety of pathogenic bacteria, including methicillin-resistant Staphylococcus epidermidis and Saureus, have been reported in a number of studies. Additionally, eugenol was discovered to exhibit a protective effect against CCl4-induced hepatotoxicity and demonstrated a potentially deadly efficacy against the multiplication of a number of parasites, such as Schistosoma manson, Giardia lamblia, Fasciola gigantica, and Haemonchus contortus.

Clove has many bioactive ingredients, including gallic acid, flavonoids, eugenol acetate, and eugenol, which are used in medicine, gastronomy, cosmetics, and agriculture. It has been discovered that cloves possess antimicrobial, antinociceptive, antibacterial, antifungal, and anticancer properties. Clove is high in phenolic compounds such as hydroxycinnamic acids, hydroxyphenyl propens flavonoids, and hydroxybenzoic acids.

Clove flower buds have powerful cytotoxic effects. It has been studied that ethanol, water, and oil-based clove extracts have cytotoxic effects on cervical cancer. Oesophageal cancer  TE-13 cells, prostate cancer DU-145 cells, HeLa cells, and breast adenocarcinoma MDA-MB-231 and MCF-7 cells were all negatively impacted, with normal human peripheral blood lymphocytes seeing just minimal impacts. As a result, clove extract could be used as a cancer treatment herb, with 14 seeming to be among the bioactive constituents [27]. The SOS response is a global response to DNA damage that stops the cell cycle and activates DNA repair.
